ST. ALi is the exclusive coffee partner of the Fair and will be served in all Fair bars and cafés. ST. ALi is Australia’s largest independent specialty coffee roaster, founded in 2005 in a South Melbourne warehouse. Nearly 20 years on, they continue to lead and push boundaries, shaping how Melbourne drinks coffee through direct farmer relationships, in-house roasting, and food that matters. Ace Hotel Sydney
Ace Hotel Sydney lives in a rejuvenated, hundred-year-old Heritage Federation Warehouse building — home to the first brick kiln in Australia.
