Four Pillars Gin


Established in 2013 in the Yarra Valley near Melbourne, Four Pillars Gin has become a global leader and Australia’s top craft spirit. Saison Aperitifs

Saison is a seasonal aperitif company that obsessively crafts non-traditional vermouth and amaro from peak-season Australian ingredients. Brighter, fresher, and more singular than old-world styles, Saison captures seasonal moments and bottles them. Each Australian aperitif begins with a single core ingredient harvested at its peak: layered with hand-picked wild herbs, fruit, and flowers from small-scale growers. No essences, no shortcuts. ST. ALi

ST. ALi is the exclusive coffee partner of the Fair and will be served in all Fair bars and cafés. ST. ALi is Australia’s largest independent specialty coffee roaster, founded in 2005 in a South Melbourne warehouse. Nearly 20 years on, they continue to lead and push boundaries, shaping how Melbourne drinks coffee through direct farmer relationships, in-house roasting, and food that matters. Now operating across four countries with over 1,000 partners, ST. ALi goes beyond the cup with signature blends, cans, capsules, and innovative cold brew formats. From laneways to global stages, including the Australian Grand Prix, they sit at the intersection of coffee and culture. Melbourne-born, globally minded, and still crew-owned – ST. ALi is defining what comes next.

Ace Hotel Sydney


Ace Hotel Sydney lives in a rejuvenated, hundred-year-old Heritage Federation Warehouse building — home to the first brick kiln in Australia. Inspired by the vibrant neighbourhood, Ace Sydney is a communal space that offers casual, considered accommodations, designed with care by Flack Studio. Drawing inspiration from architect Robin Boyd’s paradigm-shifting book, The Australian Ugliness, the paintings of Indigenous Australian artist Albert Namatjira and the building site’s legacy of pottery and ceramic creation, Flack Studio have conjured a hotel that’s a deep homage to Australia.
